Tuna Fritters

This was a random pinterest find for me — I was scrolling through my feed and this popped up. It’s kind of weird that this came to me when it did, because I had just been asking my boyfriend what we were going to do with five cans of tuna. Now, I know what you’re thinking: canned tuna? Gross! But don’t knock it ’til you try it. This makes for a super easy, super super cheap, and pretty healthy weeknight dinner. All you need is some tuna, jalapenos, onions, greek yogurt, bread crumbs and maybe a shredded zucchini or spinach if you’re feeling extra healthy.

INGREDIENTS
5 5 OZ CANS OF SOLID WHITE TUNA
2 JALAPENOS, DICED
1/2 ONION, DICED
1 EGG
1/2 CUP GREEK YOGURT
1/3 CUP BREADCRUMBS
JUICE FROM 1/2 LEMON
SALT & PEPPER, TO TASTE
DASH OF CHILI PEPPER
OPTIONAL: GRATED ZUCCHINI OR CHOPPED SPINACH

Instructions:

Carefully open the cans of tuna and let them drain over the sink. In a small pan, saute the onions over medium heat; then set aside to cool. While the onions are cooking, mix together the Greek yogurt, lemon juice, salt & pepper, chili pepper and jalapenos in a large mixing bowl. Add in the tuna, egg, cooked onions, breadcrumbs [and optional zucchini or spinach] and mix well. All ingredients should hold together.

Get a handful of the mixture and mold into a ball; flatten the ball to create a round patty. Heat olive oil in a non-stick skillet on medium-high. Gently place 3-4 patties on the skillet and heat each side for about 3-4 minutes, until golden brown and slightly crispy. Repeat until all patties have been cooked.

Serve on a bed of salad or on buns, and add chipotle mayo on top. Enjoy!
